Here’s how we make our famous cardamom & chocolate cookies at the RAWR den!
280g of coconut sugar
250g of oat flour
225g of milk chocolate (or white chocolate) chips
140ml of canola oil
30g of RAWR Fusion Cardamom
4g of salt
3g of baking soda
2 large eggs
how to do:
in a large mixing bowl, mix the coconut sugar, oat flour, RAWR Fusion cardamom, salt, baking soda with the canola oil until everything is just combined
crack the eggs into the mix and fold in until, again, just combined
add the chocolate chips and gently fold these in until, you guessed it, just combined
cover the mixing bowl and place in the fridge for a minimum of three hours – overnight is better!
once the dough has had it’s chill time, remove from the fridge and preheat your oven to 160C
use an ice-cream scoop to form four equal dough balls – or weigh 50-60g and hand roll into balls – and place these at least 10cm apart on your baking tray – they will melt down & spread!
place the tray in your pre-heated oven and bake for 10-12 minutes – the cookies should melt into flat rounds, be slightly crisped on the edges and remain chewy in the middle!
once baked, remove from the oven and allow to cool directly on the baking tray
store in an airtight container and enjoy, in moderation!
